As I continue my cardiac rehabilitation, I’ve been taking things slowly with the blog, focusing on recipes that truly support my health while being simple and delicious. Some days, I have the energy to experiment in the kitchen, while others require more rest. Learning to listen to my body has been a huge part of this journey, and creating nourishing, homemade dressings has been one of the impactful changes I’ve made to my diet.
Why Make Your Own Gluten Free Caesar Dressing?
Most store-bought dressings are loaded with sodium, preservatives, and cheap refined oils like canola or soybean oil. Even many “healthy” options contain stabilizers and emulsifiers instead of whole-food ingredients.
By making low sodium vegan dressings at home, I can control the sodium levels and shift from highly processed seed oils to nutrient-dense, whole-food fats like hemp hearts. These tiny seeds provide a naturally creamy texture while being rich in omega-3s, plant-based protein, and essential minerals—a huge win for both flavor and health.
Why Swap Processed Seed Oils for Whole Food Fats?
Many commercial salad dressings rely on cheap, refined seed oils (canola, soybean, sunflower) that are:
❌ Highly processed – Stripped of nutrients and often oxidized.
❌ Omega-6 heavy – Too much omega-6 can contribute to inflammation and heart issues.
❌ Void of fiber and protein – Just empty calories from fat.
Hemp hearts provide a superior alternative because they are:
✅ Naturally creamy – No need for stabilizers or emulsifiers.
✅ Rich in Omega-3s – Helps balance inflammation and supports heart health.
✅ Nutrient-dense – Packed with fiber, protein, magnesium, and iron.
✅ Unprocessed & Whole – Unlike refined oils, they retain all their natural benefits.
By switching to hemp hearts as the base for this gluten free Caesar dressing, you’re getting real, whole-food nutrition instead of empty calories from oil.
Why Hemp Hearts Are the Secret to the Best Gluten Free Caesar Dressing
If you’ve never used hemp hearts in your cooking before, you’re in for a treat! These tiny, nutrient-packed seeds come from the hemp plant and have a mild, slightly milky flavor with a rich, creamy texture—making them perfect for creating a gluten free dressing without the need for nuts or processed ingredients.
Nutritional Benefits of Hemp Hearts
Hemp hearts aren’t just delicious; they’re also a nutritional powerhouse. Here’s why they deserve a place in your kitchen:
- High in Protein – With about 10 grams of protein per 3-tablespoon serving, hemp hearts provide a plant-based protein boost.
- Rich in Healthy Fats – They’re packed with omega-3 and omega-6 fatty acids, which support heart health and reduce inflammation.
- Naturally Low in Sodium – Unlike many store-bought dressings that rely on salt for flavor, hemp hearts deliver a rich taste without excess sodium.
- Loaded with Vitamins and Minerals – They’re a great source of magnesium, iron, and zinc, essential for overall well-being.
The Perfect Base for a Low Sodium Salad Dressing Recipe
Traditional Caesar dressing relies on mayonnaise for its signature creamy texture. But hemp hearts work even better in a vegan version. When blended with a little tahini they create a smooth, velvety consistency that mimics the richness of dairy-based dressing.

Ingredients for Gluten Free Vegan Caesar Dressing
This recipe follows the same hemp heart base as my Hemp Heart Ranch Dressing, with a twist to give it that bold, garlicky, umami-packed Caesar flavor:
- ¾ cup hemp hearts (the creamy, nutrient-rich base)
- ½ cup water (adjust as needed for consistency)
The remaining ingredients follow the classic Caesar Dressing formula, with a few slight changes to make this a great low sodium vegan dressing:
- tahini
- lemon juice
- plant based Parmesan
- capers
- vegan Worcestershire sauce
- garlic powder
- Dijon mustard
- nori flakes
One of the key ingredients that gives traditional Caesar dressing its signature umami depth is anchovies. But for those following a vegan or plant based lifestyle, there’s a fantastic alternative: capers and nori flakes.

Nori is the same seaweed used to wrap sushi, but when dried and crumbled into small flakes, it becomes an incredibly versatile ingredient for adding ocean-like flavors to vegan dishes. It’s naturally low in sodium while providing a deep, savory taste that mimics seafood. Mixed with some capers, the nori hits that fishy and salty notes that lets us leave the anchovies out of this recipe.
Ingredients to Take the Flavor of Your Dressings One Step Further
This recipe follows the classic hemp seed dressing recipes and vegan Caesar dressing recipes before it. I’ve taken mine just a step further with a couple more ingredients that are totally optional, but go a long way to enhance the flavor profile into resembling a tasty store bought product.
First, I added some vegan lactic acid to give the Caesar dressing a tangy cheese flavor without adding the dairy in a real Parmesan. This is one of my favorite secret ingredients for adding flavor to vegan cheeses and dressings. It’s where you can get some flavor notes between the rich sour cream and funky sharp cheddar on the dank flavor spectrum.

Secondly, I added some of the old stereotypical vegan nutritional yeast. Most vegan kitchens have this staple on hand for accenting dishes with a little bit of cheesy umami flavors missing from plant based ingredients.
- Premium Nutritional Yeast Flakes – Fortified
- Batch Tested and Verified Gluten Free
- Great source of fiber, vitamins and minerals

Lastly, I add a little bit of citric acid to give the sour flavor a little more punch. I don’t know if adding a little is enough to give a substantial preservative effect, but it can’t hurt right? This is another ingredient that has so many great uses in the kitchen and household that you ought to have some on hand.
