Vegan Ice Cream Recipe Base Ingredient Ideas

Ingredients that can be used as vegan ice cream bases. Plant-based yoghurt, steel cut oats, and cashews.

The Ninja Creami has various settings for the different types of frozen treats that you could make. When it comes to ice creams, and specifically vegan ice creams, there are a few different ways to make a creamy dairy-free base. Plant-based yoghurt or canned coconut milk is an easy go-to, but if you’re worried about cost or added ingredients we have a few great options. Whole steel cut oats and unsalted raw cashews can be easily processed into a clean, plant-based ice cream with minimal effort.

For one container in the Ninja Creami Deluxe, I’m using either a cup and a half of sprouted steel cut oats or unsalted raw cashews. (Use one cup of either for the smaller Ninja Creami machines) I briefly soak the oats in two cups of filtered water, no more than a half hour is best. Add the soaked oats and the liquid to the pitcher of a high speed blender, add one more cup of water, then blend on high for only thirty seconds. Strained through a mesh sieve or cheesecloth, this oat cream makes a lucious non-dairy frozen ice cream base.

Cashews can be soaked overnight, or up to a full day, if you aren’t impatient and boil them for ten minutes instead. Process the drained cashews with three cups of water on high, and strain just like the oats to make a cashew cream base.

Lastly, if you want to make some amazing Ninja Creami protein ice cream it’s a simple thing to reserve a bit of room in the container to add in a scoop of your favorite brand of flavored or unflavored vegan protein powder. This will boost your protein intake and enhance the creaminess of the end product.

For this recipe, I wanted something incredibly clean and light but also easy to make. I’d only make one change if I wanted a completely whole food plant based recipe. You could swap the sweetener here for a few dates, but I need to watch my calories and opted for the next best thing. I used a monk fruit sweetener for this recipe that was paired with allulose instead of something like erythritol.

  • steel cut oats – the lowest calorie plant-based option to make a creamy frozen base
  • matcha – culinary grade or a blend here is fine for a refreshing green tea flavor

How to Make Matcha Ice Cream with Ninja Creami Deluxe

Making vegan matcha ice cream is effortless with your Ninja Creami machine. Hereโ€™s the quick overview (full instructions in the recipe card below):

  • Make about three cups of oat milk cream, or use whatever alternative you prefer.
  • Blend the oat milk cream, matcha powder, your choice of natural sweetener (softened dates, stevia, or monk fruit extract), and whatever stabilizer and vanilla you opt to use and protein if you want it.
  • Pour into your Ninja Creami container and freeze overnight until solid.
  • Use a firm spoon or other utensil to scrape flat any hump that forms while freezing.
  • Place your frozen solid base into the outer bowl and secure it into your Ninja Creami Deluxe ice cream machine.
  • Select the light ice cream program to transform your frozen base into smooth, creamy vegan matcha ice cream.
  • Due to the lack of fat and sugar in this recipe, the first result will be dry and powdery in texture. Add a couple of tablespoons of oat milk to the container and use the machine’s re-spin cycle to get the ice cream to the best texture.
  • Serve immediately as soft serve, or refreeze briefly for firmer scoops.

Serve immediately after the re-spin cycle for a soft-serve style texture with this recipe. Due to the absence of fat and sugars in this recipe, it may serve best after being placed back into the freezer after the re-spin cycle to firm up. This especially if you haven’t used a stabilizer ingredient such as xanthan gum or guar gum.

Absolutely! Vegan matcha ice cream can be made with other ingredients to make the ice cream base, such as canned coconut milk or coconut cream that have a higher fat content or use a sweetened condensed coconut milk to get the sweetness from added sugar too.

Is the Ninja Creami a glorified blender, can’t I just freeze ingredients to blend?

  • 1ยฝ cups steel cut oats
  • 3 cups water
  • 4 tbsp monk fruit sweetener with allulose, equivalent to table sugar
  • 1 tbsp matcha powder
  • 1 tsp vanilla bean paste
  • ยฝ tsp xanthan gum, as a stabilizer, or alternatives carrageenan or guar gum optional

Instructions
 

Instructions for Making the Matcha Ice Cream

  • Soak 1ยฝ cups of oats in 2 cups of water and let rest, up to 30 minutes for a creamy result.
  • Blend on maximum speed with the remaining 1 cup of water for 30 seconds in a high speed blender, or until you can no longer make out pieces of oats in a regular blender or bullet.
  • Strain the oat milk cream through a mesh sieve or cheesecloth and discard the oat bran, or reserve it for another recipe like oat pancakes.
  • Whisk or blend in the remaining ingredients into the oat milk cream.
  • Pour the ice cream base into the Ninja Creami container and freeze for 24 hours.
  • Scrape any hump or uneven surface in the frozen material with a strong spoon or other utensil to create the best flat surface for the machine to process.
  • Process in the Ninja Creami machine using the light ice cream setting for one cycle.
  • If the ice cream is dry and powdery after the first cycle, add about two tablespoons of oat milk or other liquid to the container and process again with the re-spin cycle.

Notes

Use one cup of oats instead of 1.5, and reduce the other ingredients by one-third, to make the proper amount of ice cream base for smaller Ninja Creami containers. 2 cups of water, two and a half tablespoons of sweetener, 2 teaspoons matcha powder, and slightly less full spoons of vanilla and stabilizer.ย
