Drain and press the tofu..

While the tofu is being pressed you can assemble the ingredients for the plant-based tzatziki.

Grate the cucumber and set aside to drain while assembling the other ingredients, give the cucumber a squeeze to remove excess liquid before adding.

Blend all of the ingredients and seasoning for the marinade and add to a bowl with the tofu slices.

Preheat the oven to 350F. Shave, or thinly slice, the pressed tofu into strips and add them to a bowl with the marinade.

Bake the tofu slices for 15 minutes and flip, then return to bake the remaining 15 minutes.

The tofu slices can be pan fried in a little olive oil for enhanced flavor or served from the oven as is, additional oil free.

Assemble in a pita with veggies and sauce.
