Ingredients for the Peach Crisp Ice Cream recipe

For this recipe, I wanted to create one of my favorite summer time treats in a frozen form. We all know and love a freshly baked peach crisp right out of the oven, but I’m tired of heating up the house and using the oven in the summer. I knew that I could have the same flavors, blended into a frozen treat made with my Ninja Creami Deluxe. This vegan ice cream has fresh peaches and a crunchy, baked oat crisp topping that we can swirl in or sprinkle on top.

  • vegan yogurt – an easy ingredient to make a luxurious ice cream base
  • fresh peaches – there’s something about the taste of fresh peaches in the summertime, but substitute canned peaches as needed the rest of the year
  • monk fruit sweetener – one of the few options without erythritol and has a great taste
  • xanthan gum – any stabilizer like guar gum or carrageenan works, optional for texture
  • vanilla bean paste – we’re not baking so the flavor of the premium vanilla shines
  • protein powder – optional for making a Ninja Creami protein ice cream

An added note for the protein powder here, vegan yogurt is usually much thinner than its dairy counterpart. This recipe using vegan yogurt results in a final product halfway between ice cream and sorbet. Adding your favorite plant-based vanilla or unflavored powder will result in a more satisfying vegan Ninja Creami protein ice cream with the creaminess you’ll crave.

Here’s a quick overview of the process you’ll follow (complete instructions will be provided in the recipe card below):

  • Prepare the crunchy topping by baking oatmeal, all-purpose flour, vegan butter, light brown sugar, and cinnamon until crispy. (see complete ingredients and instructions below)
  • Blend diced peaches, plant-based yogurt, sweetener, vanilla, any stabilizer (optional), and cinnamon until smooth.
  • Freeze the mixture in your Ninja Creami pint container for twenty-four hours until solid.
  • Use a firm spoon or other utensil to scrape flat any hump that forms while freezing. 
  • Place your frozen solid base into the outer bowl and secure it into your Ninja Creami Deluxe ice cream machine.
  • Select the light ice cream program to transform your frozen base into smooth, creamy vegan peach ice cream.
  • Due to the lack of fat and sugar in this recipe, the first result will be dry and powdery in texture. Add a couple tablespoons of oat milk to the container and use the machine’s re-spin cycle to get the ice cream to the best texture.
  • Serve immediately as soft serve, or refreeze briefly for firmer scoops.
  • Mix in your prepared oat crisp topping until evenly distributed, or just sprinkle on top.

The result is an exceptional vegan ice cream packed with flavor and texture—perfectly creamy, subtly spiced, and utterly irresistible!

The beauty of making this dessert is that you can make this topping whenever you want, you don’t have to heat the kitchen up at serving time. This oat crisp topping can be made ahead of time and saved to mix in your finished ice cream, or just sprinkle it on top for maximum crunch. It’s so simple to make, we’re just mixing everything together and baking it for a half hour. Once it cools off, the topping can be broken into edible size crumbles and sealed up until use. Serving Ideas

Serve immediately after the re-spin cycle for a soft-serve style texture with this recipe. Due to the absence of fat and sugars in this recipe, it may serve best after being placed back into the freezer after the re-spin cycle to firm up. This especially if you haven’t used a stabilizer ingredient such as xanthan gum or guar gum.

This Vegan Peach Ice Cream is delightful on its own or served with additional toppings such as:

Can you make a full fat and flavor vegan peach ice cream?

Absolutely! Vegan peach ice cream can be made with other ingredients to make the ice cream base, such as canned coconut milk or coconut cream that have a higher fat content. You can also use canned peaches in syrup to get the sweetness from the added sugar as well.

Is the Ninja Creami a glorified blender, can’t I just freeze ingredients to blend?

Ingredients
 

  • cups fresh diced peaches , substituted canned peaches, sad emoji
  • 1 cup plant based yogurt
  • ¼ cup monk fruit sweetener with allulose, equivalent to table sugar
  • 1 tsp vanilla bean paste
  • ½ tsp cinnamon
  • ½ tsp xanthan gum, as a stabilizer, or alternatives carrageenan or guar gum optional

Ingredients for the Oat Crisp Topping

  • cup steel cut oats
  • cup all-purpose flour, substitute gluten free baking flour mix
  • cup light brown sugar
  • ½ cup plant based butter, one baking stick
  • 1 tsp cinnamon
  • ¼ tsp salt

Instructions
 

  • Dice two good sized peaches, and measure out a cup and a half to use.
  • Blend the diced peaches with the remaining ice cream base ingredients.
  • Pour the ice cream base into the Ninja Creami container and freeze for 24 hours.
  • Scrape any hump or uneven surface in the frozen material with a strong spoon or other utensil to create the best flat surface for the machine to process.
  • Process in the Ninja Creami machine using the light ice cream setting for one cycle.
  • If the ice cream is dry and powdery after the first cycle, add about two tablespoons of oat milk or other liquid to the container and process again with the re-spin cycle.

Instructions for Making the Oat Crisp Topping

  • Preheat the oven to 350F
  • Mix all of the ingredients, except for the butter, together in a mixing bowl.
  • Cube the cold butter into the mixing bowl.
  • Coat the butter in dry ingredients so that you can use a fork to mash the butter throughout the bowl, until noticable pieces of butter are mostly incorporated.
  • Pour the mixture into a brownie baking tin, or onto a parchment lined baking sheet.
  • Bake at 350F for 30 minutes.
  • Remove from the oven when golden brown and crispy, then allow to cool.
  • Break up the oat crisp topping into bite sized bits and smaller, then store in a covered container in the refrigerator until use.

Notes

Use one cup of peaches instead of 1.5, and reduce the other ingredients by one-third, to make the proper amount of ice cream base for smaller Ninja Creami containers. 1 cup of yogurt, two and a half tablespoons of sweetener, and slightly less full spoons of vanilla and stabilizer.
